Craig’s Estate Pie

Pulled Pork, Apple & Cider

When we first opened Craig’s, one of our house-recipe favourites was the Pork & Apple Pie.

​

Now we’ve taken that original and given it a slightly more grown-up makeover. A bit like us, really.

​

Pork shoulder, slow-braised in dry apple cider until beautifully tender, with Granny Smith apple, Dijon and wholegrain mustard, herbs and a deep, glossy Craig’s gravy.

​

No sweet barbecue sauce.


No minced filling.


And definitely no shortage of pork.

It’s bold, savoury and properly slow-cooked, with generous pieces of pork tucked into Craig’s golden pastry.

Craig’s Estate Pie

Duck, Cherry & Shiraz.

Yes, it sounds fancy.

That’s because it is.

​

Slow-cooked pulled duck leg, rich Shiraz gravy and cherries, all tucked into Craig’s golden pastry.

It’s rich, glossy, comforting and just a little bit fancy — the kind of pie that feels right at home in a country bakehouse, but wouldn’t look out of place on a very good dinner table.

Craig’s Estate Pie

Slow-Braised Beef Cheek & Red Wine

A rich, slow-cooked classic with a distinctly Craig’s touch.

Tender beef cheeks are slowly braised in red wine, beef stock, thyme, bay, onion, carrot and celery until beautifully soft and falling apart. The rich braising liquid is then reduced to create a deep,

glossy gravy, finished with Childerley Park Relish for a subtle balance of fruit, spice and sweetness.

Generous pieces of slow-braised beef cheek are folded through the rich red wine gravy and encased in Craig’s golden pastry.

For those dining in, it can be served with our Mediterranean Roasted Potato & Sweet Potato Tian — layered with rosemary, thyme and dried cranberries, tender in the centre and lightly crisp around the edges.

Craig’s Estate Pies: A Proper Country Pie, Made Properly

Some ideas arrive fully formed. Others begin quietly, somewhere between a pot on the stove, a conversation at the bench, and the simple question: "what if we made the pie a little more special?" Craig’s Estate Pies began that way. At Craig’s Bakehouse, pies have always been part of the story. We are, after all, an old country bakery in the heart of Naracoorte, where a good pie is not a novelty. It is a measure of the place. But we wanted to explore what might happen if we took the comfort of a traditional bakery pie and gave it the time, ingredients and attention usually reserved for a long Sunday lunch. Not fast food. Not mass-produced food. Not something designed by a spreadsheet before it ever reaches a kitchen. A proper pie. Slow-cooked, generously filled and made with flavour at the centre of the decision. And not a small one either. These are substantial pies — around 350 grams each — built to satisfy properly. The kind of pie that holds its own after a long morning in the paddock, a day at the yards, or a visit to one of Naracoorte’s many agricultural shows and grazing events. This is food that understands where it comes from. The Estate Pie range was created to celebrate that idea. Each pie is released in small batches, with fillings that are braised, reduced, tasted, adjusted and finished here in the Craig’s kitchen. Venison with red wine and juniper. Kangaroo with quince and red wine. Beef cheek in a deep red wine braise. Duck with cherry and Shiraz. Pork shoulder slow-cooked with apple and cider. These are not everyday pie warmer fillers. They are richer, slower and more deliberate. The kind of pie that asks you to pause for a moment before cutting into it. Where possible, we build these pies around regional and seasonal ingredients. That might mean Limestone Coast wine in the braise, vegetables from nearby growers, or produce from Childerley Park finding its way into the pot. Childerley Park tomatoes, relishes, herbs and orchard-style flavours have become part of the broader Craig’s story — not because they sound impressive on a menu, but because they taste like something real. A spoonful of relish folded through a beef cheek gravy. Apple and cider with slow-braised pork. Tomato, herbs and vegetables giving depth to a filling before it ever sees pastry. These are small details, but they matter. The same thinking extends to how the Estate Pies are served. You can take one away, still warm and wrapped for the road, or you can dine in and enjoy it on one of our blue Craig’s plates with our Mediterranean roasted potato and sweet potato tian — layered vegetables, herbs and dried cranberries, roasted until tender through the centre and crisp at the edges. It is country food, but not careless food. And that matters to us. "In a time when so much of what we eat is being pushed toward cheaper, faster and more standardised, we think regional towns still have an important role to play in protecting proper cooking.", says Craig "Food does not need to be complicated to be good, but it does need to be respected. A slow braise cannot be rushed. A good gravy cannot be faked. A filling cannot be generous only in the photograph." There is a difference between being affordable and being reduced to the lowest possible cost. The Estate Pies sit firmly on the side of value through quality — the sort of value you taste in the first mouthful, and remember after the plate is cleared. We also believe regional food should give people a reason to travel. For locals, the Estate Pie is something new to look forward to each week. For visitors, it is a reason to pull off the road, take a seat, and experience something that belongs to this place. Naracoorte is more than somewhere between destinations. It is a town with producers, growers, bakers, cooks, stories and tables worth stopping for. That is what we hope Craig’s Bakehouse can be part of — a modern country bakehouse with deep regional roots, where locals feel at home and travellers feel they have found something worth telling people about. The response so far has told us we may be onto something. Some Estate Pie batches have sold out within days. Customers have come looking for the next release. Reviews have been generous. The pots, admittedly, have not been getting much rest. But that is the joy of it. Craig’s Estate Pies are not about producing thousands of identical pies and hoping no one notices. They are about making something smaller, better and more considered. A weekly release. A reason to return. A pie with a little story behind it. Made here in the Craig’s kitchen. Filled generously. Baked in golden pastry. And available only while each week’s batch lasts.
